Most restaurants sell a mix of items(商品), and not all dishes are created the same. Industry convention(惯例) groups them into:
Stars: popular items with high profits
Plow Horses: popular items with low profits
Dogs: unpopular items with low profits
Puzzles: unpopular items with high profits
Examples of stars include pizzas, pastas, and omelets, which are popular, and relatively cheap to make, especially in great amount. Examples of plow horses include steaks, which are popular, but also relatively expensive for a restaurant to make high-quality products.
There are some other things restaurants tend to do:
1. Restaurants use particularly imaginative language.
2. Restaurants use photos to attract diners.
3. Restaurants will limit your choices.
4. Restaurants design their menu.
5. Restaurants are very tricky with their price, most ended with nine.
Restaurants are always trying to take money out from your pocket. So what measures do they take? Let’s have a look.
1. Items labelled “For Two”, aiming at couples especially who are on a date. Priced for single person with per person printed with smallest font(字体) at the bottom of the price. Of course everyone forgets to multiply it by two.
2. Good use of adjectives. Using all kinds of vivid adjectives in description of a profitable dish placed next to not so vivid adjectives in description of a less profitable dish.
3. Put some Menu Items in boxes or borders to catch attention. Restaurants place their profitable items in there.
